FOUR SIGNS IT IS TIME TO REPLACE YOUR WALK-IN COOLER

No business-owner wants to hear that it’s time to replace a walk-in refrigerator or freezer. These investment appliances are essential to many businesses but aren’t the cheapest item to purchase. Old and inefficient walk-in coolers end up spending a lot of money over time due to costly repairs, lost stock, and high utility bills. Replacing your run down walk-in will help lower these costs and you can save in the long run.
Here are four signs that it may be time to start shopping for a new walk-in cooler:
1. ICE OR FROST BUILD UP
If you find that you are regularly scraping ice out of your cooler or that you are losing items to frost bite there may be excess moisture allowing the ice to accumulate. Excess moisture is often caused by air leaks between panels or other cooler components.

2. REGULAR LEAKS
Damaged seals can lead to water leaks and puddles. Stagnant and standing water can cause mould and mildew build up as well as ice accumulation. Avoid health inspection problems as well as lost inventory due to mould and mildew by keeping track of any leaks.

3. FLUCTUATING TEMPERATURES
If your walk-in cooler is always working to regulate its temperature it may be time to replace your unit. As stated above, temperature fluctuate can be the symptom of many cooler problems such as, but not limited to, insulation failure or a broken thermostat.

4. FOOD SPOILING BEFORE ITS EXPIRATION
If you regularly experience many perishable items spoiling before their expiration this is a sure sign of an operating problem within your cooler. Throwing away inventory that should not have gone bad is certainly frustrating but it may point to a larger storage problem that needs to be evaluated.
If you experience any of the signs above, we advise that you have a commercial refrigeration technician check your walk-in refrigerator or freezer for any damage or internal failures. If your repairs are beginning to burn a hole through your pocket you may want to consider replacing your unit with a new walk in cooler system.

THE BENEFITS OF BLAST FREEZERS FOR FOOD SAFETY AND BUSINESS

With the commercial refrigeration and freezer market increasing worldwide, it can be seen that many businesses are coming to understand the importance and benefits of blast freezing. This rapid expansion is not only affecting large organizations but smaller, local ones too as more and more of us demand freshly frozen food products.
If we are to understand the reasons behind this expansion, we must look toward the specific benefits that blast freezers hold, as well as the hitches that they can prevent within the food and catering industries.

Bacterial Protection and Control
Meat, fish and poultry can all harbor considerable amounts of bacteria, such as Escherichia coli and Salmonella in their fresh, raw form. These bacteria multiply alarmingly quickly over just a few days if left in unsuitable conditions. However, they can be controlled and destroyed if the correct freezing and cooking methods are used.
One of the biggest benefits of blast freezers is that they have the ability to freeze several tons of produce in as little as 4 hours. This super-fast process of the blast freezers ensures that bacteria has minimal time to develop and keeps produce fresh in bulk.
As a rule of thumb, you should ensure that meat, fish and poultry are stored at around -18 °C (equivalent to 0 °F) or colder. At this temperature, bacteria cannot develop and you can be sure that your produce is safer for consumers once it is in their hands.

Nutritional Health
Another fantastic benefit of the blast freezer is that it can help to preserve nutrients in food.
The speedy freezing process of the blast freezer provides benefits to both the consumer and the business, as it effectively stops rapid nutrient deterioration. A slower freezing process would still allow for unwanted changes in the produce and could result in bland, unhealthy food being consumed by the public.
Nutritional health is of particular importance if stored food is intended for schools and hospitals. Young children and those who are considered vulnerable are particularly reliant on nutrient-dense foodstuffs and that is why the nutrient preserving properties of a blast freezer are so beneficial.
Blast freezers can also be used to retain nutrients in ready cooked meals, making them an important asset to have as the demand for healthier frozen goods grows across the globe.

Why Invest in a Blast Freezer? The Business Case
If you are looking to expand the amount of stock you hold quickly and without fuss, then investing in a blast freezer is the right choice for your company. With easy setup and no planning permission necessary, you can begin blast freezing new produce within days, ensuring a plentiful supply of stock and giving your customers a broader product selection.
Blast freezers can be used by food distributors and caterers to preserve produce for transport to other areas. Alternatively, a blast freezer can be used as a static storage solution. They are available in a range of sizes to cater to the needs of different businesses, and they also offer the benefit of portability.

Great Cost Effectiveness
Investing in a blast freezer can not only save you money through minimizing waste but it can help your business expand the produce that it has on-hand. Much like the bacterial and nutritional advantages, expansion is beneficial for both the business and the customer.
Food safety should be of the utmost importance for every organization in the industry. Adopting new and efficient ways to improve this will ensure a harmonious relationship between the company and the consumer, and will improve the health of the general population.

So who are blast freezers beneficial for?
Butchers, Bakers, Retailers, Food groups and even Pharmaceutical companies have all reaped the benefits of portable blast freezing units. Their versatility means that they can be used across several industries and for all types of temperature-sensitive products.

BLAST FREEZER AS AN INVESTMENT OPPORTUNITY

Blast freezers are a fantastic investment for businesses.
From fishmongers, Agro meat processors to corporate caterers, these unique, rapid freezing units can bring about lots of positive change, both for developing companies and established big businesses alike.

So what are the top 5 reasons to invest in a blast freezer for your business?

FAST FREEZING
Possibly the biggest and most important reason to invest in a blast freezer is thanks to its main function - rapid freezing. The whole idea behind a blast freezer is that you can safely and rapidly cool, chill and freeze tonnes of produce in a matter of hours. This type of freezing can’t be achieved any other way, which is why blast freezers are so vital to businesses who deal with large amounts of produce every day.

PRODUCT EXPANSION
Another fantastic benefit of blast freezing is that it can help you to expand the range of products you serve or distribute. Rapid, long term freezing means that produce lasts much longer, giving you time and space to add more products to your repertoire. With lots of produce able to be frozen months in advance, you no longer need to worry about heavy wastage. Blast Freezers also come in a range of sizes. So whether you’re a small business or a large one, you can expand at a rate that suits you and bring all your products in house.

BETTER QUALITY GOODS
The rapid rate at which a blast freezer can chill food means that ice crystal formation is kept to a minimum. These crystals are a food distributor or caterer’s worst enemy as they damage the taste, texture and appearance of food which can lead to wastage if produce isn’t fit for sale. Instead, only ‘micro’ ice crystals are formed when using a blast freezing unit, which leads to a higher quality product overall.

IMPROVEMENT ON WASTAGE
Blast freezers not only offer longer term, deep-freezing, they also come equipped with state of the art temperature controls and monitoring. This ensures you eliminate temperature fluctuations that often come with domestic freezing units and have the ability to closely track daily temperature, so if problems do arise, you can take action quickly and effectively. All of this leads to less wastage and in turn, improved profitability.

BRAND IMPROVEMENT
Finally, investing in a blast freezer can be incredibly beneficial for your brand and company image. Processing or distributing highly quality fish, meat and poultry or nutrient-rich catered meals can only reflect positively on your business. If you want to be known for serving the freshest, highest quality frozen produce in your area, then a commercial blast freezer is a sensible investment.

Whatever your reasons for considering a blast freezer, Dekoolar Nigeria Limited has in its factory different sizes of high quality units suitable for any business working in the food sector, meat processing sector and beyond.

COMMON COLD ROOM PROBLEMS AND THEIR SOLUTIONS

Cold rooms are commonly used for industrial purposes. Apart from maintenance, owners or operators should also be familiar with the common problems that they might encounter with cold rooms. Dekoolar Nigeria Limited is glad to enlighten owners or operators on some of these problems, their causes and recommended solutions.

The refrigeration function cannot be turned on

Probable causes:

  • The switch is broken.
  • Loose connection from the power source.
  • Unsuitable line voltage.
  • The circuit breaker is not working.

Recommendation:

Check the switch. Try to switch it off first and then turn it back on again. If nothing happens, you can also check if the power cable is properly connected or if it is connected with an appropriate line voltage.

Rotting of products

Probable causes:

·         High temperature, particularly products on top shelves.
·         Products are already rotten, even before storing them.

Recommendation:

Always check if the products are damaged or overripe before storing them. If the room has an uneven temperature, the top shelf products will be exposed to warmer temperatures because warmer air travels up. Stack products wisely. Aside from rotting, higher temperatures can also cause early signs of aging, particularly in raw products.

Some products are over-freezing and some are not

Probable causes:

·         Freezing air from the evaporator coils is going directly to the product.
·         Products are stacked too close to the coils.
·         The products inside are not properly arranged.

Recommendation:

Consider installing a restraining device under the coils to deflect cold air. Stack your products in a way that cold air can still spread freely inside the room. It is advisable to stock products in the lower part of the room.

Water Build-Up in products

Probable causes:

  • Warm temperature in the area of the product.
  • Warm products are in contact with already frozen products.
  • Leaked defrosted water on the product.

Recommendation:

Make sure that the defrost drain tubes are not leaking to prevent them from dripping onto the products. Also, consider stacking warm products away from already frozen products. Installing humidification equipment is also recommended.

The temperature is warmer than the original temperature

Probable causes:

  • The refrigeration unit is not sufficient to cope with the volume of stored products.
  • Hot weather.
  • The airflow is not suitable for the room size.

Recommendation:

Install a higher refrigeration cooling capacity and install appropriate (thicker) walling and roofing materials.

BLAST FREEZER, FOOD SAFETY AND FOOD QUALITY

A blast freezer is a very special and unique machine. It is actually used to shock freeze food items before storage. Being able to do so has a wealth of benefits for both the home and commercial user. Unlike with slower freezing methods temperatures in a blast freezer can go as low as -40°F preventing bacterial growth from such nasties as e.coli, salmonella, staphylococcus and streptococcus and therefore making food much safer for consumption.
When food is frozen in the freezer box of your fridge or a chest freezer, it is a slow process and ice crystals form inside the food. That's because most meats, vegetables, and other commonly frozen foods have water in them. The longer it takes to freeze the food, the bigger the ice crystals will get.
Most of the time these large crystals will cause cells to explode and the food loses its nutritional value, texture and quality. However, by shock freezing, ice crystals do not get nearly as large and instead of causing damage it actually locks in all the nutrients, moisture, and best of all the quality.
Commercial Blast Freezers
For use in hotels, restaurants, groceries, catering shops and other food related businesses like livestock meat processing companies, there are many large capacity machines on the market. The biggest are the walk-in variety which allow for trays and carts full of food to can be rolled into the unit at once for quick and easy shock freezing. While these can be expensive they are more often than not a necessity for large operations that need to preserve a huge amount of food items and ensure their quality for customers at the same time.
Some commercial options are actually designed to work best with certain foods. Storing ice cream in ordinary freezers particularly after it has been just been freshly made, can lead to the formation of ice crystals which in turn affects its taste and especially texture. An ice cream blast freezer will guarantee your ice cream retains its original flavour and creaminess.
Regardless of how big or small your needs are, there is a unit that can meet them. For keeping food safe from bacteria, fresher for longer, and maintaining its quality, a blast freezer is the only way to go.

VARIOUS TYPES OF COMMERCIAL REFRIGERATION EQUIPMENT

Commercial refrigeration equipment plays an important role in many kinds of establishments. They help the establishments keep supplies or products at optimal conditions. For example, companies in the food industry use the equipment to store perishable products to maintain freshness. The pharmaceutical industry also finds it essential to use refrigeration equipment to keep certain medicines and vaccines at their required temperatures. This equipment can be hired or bought depending on how long an establishment needs it.

Types of Refrigeration Equipment

The following are the types of refrigeration options that can be used for commercial venues.

Blast Chillers

These are common types of refrigerators used in commercial establishments. They are mainly used for the purpose of lowering the temperature of food or freezing food fast. Most chillers take about ninety minutes to lower food temperatures from 70 degrees F to 3 degrees F. They are specifically designed to comply with certain food handling and safety regulations. There is a wide variety of blast chillers available and it is important that you choose a blast chiller that has all the features you need.

Display Freezers

These types of refrigerators are commonly found in grocery stores and are used to store beverages and food items. They have see-through doors that allow customers to view the items in them without having to open them. Certain kinds of display refrigerators do not contain doors. The food items contained in these refrigerators are at a reachable range and customers can quickly pick them out. They are therefore convenient for use in food stores.

Fish Refrigerators

These refrigerators are generally used at commercial establishments like fish markets and grocery stores. They are designed in a similar manner to conventional refrigeration appliances but they feature sliding trays that hold the fish.

How To Select Commercial Refrigeration Equipment

There are a number of things to consider when selecting commercial refrigerators. The first thing to consider is the amount of food that you need to refrigerate. This will enable you to get a refrigerator that contains adequate space for storing food. Refrigerating units come in various storage capacities and it is essential to ensure that you get the right size so that you do not waste money by having to get an additional unit or getting one that has too much space than you can utilize.

The other thing to consider is the amount of space in the area where you want to install the refrigeration equipment. If you are not sure whether the equipment you want to purchase will fit, you should visit a supply store and get a CAD drawing of your establishment. This will allow you to know where all equipments will go and you will have the best chance of getting what you need by informing the professionals about the plan you have for your establishment. The other important thing to consider as you choose this equipment is reliability. The reason for this is that your customers will generally expect to access food that is well looked after and fresh.

The best commercial refrigerators are specifically designed for commercial heavy duty use. Most of their compressors are placed beneath the fridge and this makes then easily accessible for regular maintenance and cleaning. They are also resistant to damage, which can occur in the busy environments of commercial establishments.

If you own a bar or a restaurant then it is very likely that you will need to acquire the very best possible refrigeration equipment that you can get for your money. There are a number of suppliers of commercial refrigeration machines and this type of refrigeration equipment is not cheap. You need to be prepared to do your homework and spend time finding out about the best refrigeration models that will meet your requirements.

PREVENTING MOULD GROWTH IN COLD ROOMS

Cold rooms are an essential part of many industries. But the low temperatures and restricted air movement present in the room make an ideal condition for condensation and moisture build up. This in turn, presents the perfect place for mould to grow.

This can bring about a number of problems, including the inhalation of mould spores and the contamination of goods in the room.
So what can you do to reduce the chance of mould growth in cold rooms?
Ensure all surfaces are clean
Surfaces are especially prone to mould in your cold room, so it’s imperative that that these are kept clean.
You should clean the surfaces using wet rags and mops and then make sure that they’re dried well. Dusting and sweeping can release mould spores into the air. Be wary of certain chemicals too, some can damage metal surfaces.
Use the cold room correctly
Every cold room has been designed for a specific function, and they should only be used for this function. There are even cold rooms on the market that are designed to deal with mould growth better than others.
Make sure that you’re using your cold room in the correct manner.
Always keep the door shut
Even when the room is in use it’s important that door is kept shut. Why? Well because most contaminants (like mould) originate outside the room and then make their way in.
Store goods correctly
If you store goods like food incorrectly then you should expect the growth of mould. It’s important that you make use of suitable containers to prevent contamination. Do not use cardboard boxes – this is because they’re composed of cellulose which is an excellent material for mould to grow on.
Keep an eye out for leaks
Any moisture making its way into the cold rooms is going to increase the risk of mould growth. Even a minor leak can turn into a huge problem. So keep your eye out for them and repair them as soon as they’re spotted. Any spills should be cleaned immediately too.
Do you in need of Cold Rooms in your business?

PRACTICAL ADVICE FOR STORING FOOD IN COLD STORAGE ROOMS

Dekoolar Nigeria Limited has the privilege to work with many companies who use cold storage facilities to support their business. Without such solutions, it would be impossible for mainstream food retailers, catering companies, restaurants and providers of food logistics etc to safely store perishable items of produce on their premises.
Even with commercial cold storage solutions, it pays to follow a strict code of practice when you are storing food for your business. Follow some of this advice and you will do all you can to ensure your food is fresh and ready to deliver or prepare for your customers.
Rotate the stock you are storing
Keep a close eye on dates and monitor the movement of items that are being taken out of or delivered to your cold storage chiller. Put newer items at the back of shelves and bring older produce forward so you are using them first. Adopt this system and you ensure the items that need using first are given top priority.
Be mindful of what goes where
Certain produce should be placed on the lower shelves of the cold storage unit. Meat, for example, needs to be placed right on the bottom shelf away from other perishables. This will prevent juices from dripping down and contaminating other food stock you are storing.
Monitor interior temperatures
The right temperature is vital if you want refrigerators and cold stores to work safely with the greatest efficiency. Check the temperature is adjusted accordingly to keep food well preserved and within the recommended guidelines.
Containerise the food
Air-tight containers can be very useful when you are storing food items.  They help to extend the life of produce and prevent it spoiling quite as quickly. Once the food comes into contact with air it already starts to spoil. Make sure you give it the longest shelf life possible and pop it into an air-tight container.
Keep food storage areas clean
A clean kitchen is a healthy kitchen so make sure you sanitise storage and food preparation areas on a regular basis to minimise the chance of bacteria growing.  You can organize shelves in cold stores and wipe them clean, whilst addressing other areas of the kitchen at the same time. Pay close attention to food spills. These should be wiped up immediately to prevent bacterial growth which could lead to spores spreading.
If you have any doubts about the quality of the food you are storing it’s always best to throw it away. Check use-by dates and monitor the shelf life of any produce you are storing inside cold storage facilities to be on the safe side.
Should you require walk-in cold rooms, we have the ideal solutions for you here at Dekoolar Nigeria Limited and you can contact:

WHAT COULD GO WRONG WITH COMMERCIAL REFRIGERATION

In the commercial food business, some of the most important pieces of kitchen equipment are the various types of refrigeration, such as walk-in coolers, freezers and refrigerators. When problems occur with commercial refrigeration equipment, it can complicate the way a restaurant runs on a given day. In extreme cases, a restaurant may have to shut down temporarily or even permanently.

Fortunately, you can protect one of the most important investments in your business by learning about the common refrigeration problems. You can also practice prevention, and learn some simple repair solutions. With the right information, you can rest easy knowing your commercial refrigeration system is running smoothly.

COMMON REFRIGERATION PROBLEMS

Here are some of the most common problems that occur with commercial refrigeration equipment:

The food isn't cold enough. One common problem that occurs with commercial refrigeration equipment is temperatures not being cold enough. When the temperature in a piece of equipment isn't cold enough, then food is more likely to spoil, causing the spread of harmful bacteria and unpleasant odours.
Fans are in need of repair. Broken and clogged fans are another common malfunction. When a fan isn't functioning properly on your refrigeration equipment, proper air ventilation and temperature control become difficult and can keep your food from staying as cold as it needs to be.
Thermostats are tracking temperatures incorrectly
Malfunctioning thermostats can cause food to spoil since they regulate temperatures in any piece of equipment. If they are off, the actual temperature may be too high, spoiling food.
The compressor is broken. A broken compressor can greatly affect the constancy of temperature control in commercial refrigeration equipment and cause more complications later on if not caught in time.
Refrigeration coils are worn out. Coils can become problematic when dirty or frozen and often become damaged when the temperature is not being properly regulated in a piece of commercial refrigeration equipment.

POINTERS FOR PREVENTING PROBLEMS.
You can prevent many minor problems that occur in commercial refrigeration equipment. By checking every part of your refrigeration equipment for consistent functioning, you can prevent many malfunctions that could cost you a lot of time and money. Here are some additional tips:

Perform routine maintenance. Schedule times for a qualified commercial refrigeration technician to inspect your equipment. The more you use your refrigeration equipment, the more frequently you should have someone inspect it.
Clean equipment regularly. Cleaning your refrigeration equipment helps it run more efficiently. It also reduces wear and tear. When cleaning, you may see problems with your freezer and cooler you could otherwise miss.
Replace worn parts promptly. If you find a worn or outdated part while cleaning or during maintenance checks, it is best to replace it right away. You may forget and then have a complete refrigeration break down at the most inconvenient time.

QUICK SOLUTIONS FOR SIMPLE PROBLEMS
Try these easy solutions for simple commercial refrigeration problems:
Clean equipment regularly. Thoroughly cleaning your refrigeration equipment's parts can help prevent lots of malfunctions, particularly with fans and coils. Using a dry dusting cloth to wipe down equipment that uses static to attract particles of dust and dirt can keep coils dry and clean.
Check fan blades. You should clean any fan blades from time to time. To do this, remove any protective covers and wipe each fan blade clean. This will allow it to work properly and keep neighbouring parts of the equipment from overheating.
Look for malfunctions. Check refrigeration equipment regularly for malfunctions. Thermostats and other parts must be checked and maintained on a routine basis so that larger problems can be prevented before they disrupt your entire business day.

CONSISTENCY IS KEY
Scheduling regular checks by a service technician can also prevent any malfunctions. They will be able to spot problem areas a lot more quickly, which will ultimately save you cost and inconvenience. Planning regular equipment checks monthly, bimonthly, or quarterly can be a great way to keep a schedule and record issues as they arise.
There are ways to streamline the maintenance of your commercial refrigeration equipment to make it more effective. Whether you need to have someone repair your cooler or freezer, there are solutions to prevent multiple malfunctions from catching you by surprise.
